Tallow vs Lard: Which Fat to Cook With, and When

Two white bricks of animal fat. Both are having a moment. Both come with the same "your great-grandmother cooked with this" pitch. And people keep treating them like the same product, which is how you end up with a rhubarb pie that tastes faintly of pot roast.

They are not interchangeable. Beef tallow smokes higher — about 400°F against lard's 370°F — and belongs anywhere heat and browning are the point. Lard stays softer and more workable, and belongs in pastry. Tallow is beef, lard is pork, and they melt at different temperatures, which turns out to matter more than the smoke point does. Here's the whole argument, with numbers and an actual recommendation instead of a shrug.

The short answer, in case you're standing in the store

Cook with beef tallow when heat is the point. Searing steak, deep-frying, roast potatoes, anything where you want a dry, crackly, browned exterior. It holds the highest temperature of the two and it tastes like beef, which is usually what you want in that situation.

Cook with lard when texture is the point. Pie crust, biscuits, flour tortillas, tamales, refried beans, doughnuts. Specifically leaf lard for the sweet stuff. It is softer, more workable, and it does not announce itself.

If you've only got room for one jar, let your cooking decide: mostly savory food at high heat, tallow; mostly baking, lard. Buy both if you can. Two jars cost less than the olive oil you're already going through.

What each one actually is

Tallow is rendered beef fat. The premium version starts as suet, the hard, crumbly fat packed around the kidneys, which renders down clean, firm and pale. Trim fat and back fat also render into perfectly good tallow, just a little softer and a little more assertively beefy. We render a lot of beef fat around here, so we have strong feelings about suet.

Lard is rendered pork fat, and it comes in grades that matter more than most recipes admit:

  • Leaf lard — the fat from around the pig's kidneys and loin. Fine-grained, nearly white, close to flavorless. This is the pastry fat. This is the one bakers get misty about.
  • Fatback lard — from the back. Mildly porky. Great for frying, tortillas, beans, anything savory.
  • Shelf-stable supermarket lard — usually hydrogenated and stabilized so it can sit on a warm shelf for a year. It works, it's cheap, and it bakes fine. Just read the ingredient panel so you know what you bought.

Read the label on tallow too. "Beef fat" is the whole ingredient list you want to see.

Smoke point and melting point: the two numbers that decide everything

Beef tallow lands around 400°F (205°C). Lard sits a bit lower, roughly 370°F (188°C), with clean leaf lard creeping up toward 390°F. Butter, for scale, gives up at about 302°F once the milk solids start burning.

That 30-degree gap sounds small. It is not, if you deep-fry. Frying oil wants to live at 350–375°F, and every fat degrades a little each time you heat it, so starting 30 degrees higher buys you real margin. Tallow also survives more fry sessions before it goes dark and fishy-smelling, mostly because it carries less polyunsaturated fat to oxidize: USDA figures put beef tallow at roughly 50% saturated, 42% monounsaturated and 4% polyunsaturated, while lard runs closer to 39% / 45% / 11%. Nothing mystical about it. More double bonds, more chances to break.

Treat published smoke points as a starting position, not a spec. They drop every time you fry, and every stray crumb of batter drags them down further. Strained fat smokes higher than dirty fat. Always.

Now the number nobody talks about, which is actually the one that decides your pie: melting point. Lard melts around 97°F, butter a shade lower at about 94°F. Beef tallow doesn't fully let go until 113–122°F depending on the cut — call it 118°F. Your mouth is 98.6°F. So lard and butter melt on your tongue and tallow, technically, does not: it can leave a faint wax on the roof of your mouth in a cold pastry. In a hot roast potato you'll never notice. In a chilled pie crust you absolutely will.

Flavor: beefy versus invisible

Tallow tastes like beef. Not overpoweringly, but it's there, and it gets stronger the more connective tissue rode along during rendering. McDonald's fried in a blend that was about 93% beef tallow until 1990, and people are still writing essays about how the fries tasted better then — you can get most of it back at home, incidentally. That's the flavor we're talking about. It's a feature in fries, roast potatoes, Yorkshire pudding and anything you'd deglaze with red wine.

Leaf lard tastes like almost nothing. That is its entire superpower. It contributes fat, shortness and flake without contributing pork. Fatback lard is a middle ground: enough pig to be noticeable in a tortilla, in a good way.

So: sweet or delicate, leaf lard. Savory and browned, tallow. And when you do swap, swap in the direction that hides the mistake — lard in a savory pie is fine, tallow in a peach galette is a conversation.

Which one for which job

The pastry thing deserves an explanation, because "lard makes flakier crust" gets repeated without the why. Lard is plastic across a wide temperature range — workable and cold-firm at the same time — so it flattens into sheets between layers of dough instead of shattering into gravel. Sheets become steam pockets, and steam pockets are flake. Tallow is more brittle straight from the fridge, so it fights you.

Meanwhile the frying thing goes the other way. Tallow's firmness at room temperature is exactly why fries pulled out of it drain crisp instead of greasy — the film left on the surface sets rather than staying slick. Same property, opposite verdict, depending on the job.

Rendering and storage: where the two fats diverge

The method is the same for both, and it's boring in a good way: cut the fat cold and small, hold it at 225–250°F for two to four hours, strain it hot through cheesecloth, jar it. Wet rendering matters more for lard than for tallow. Adding half an inch of water to the pot buffers the heat and gives you a paler, cleaner, more neutral fat. For tallow that's a nice-to-have. For leaf lard it's the whole point — it's the difference between a fat that vanishes into a pie crust and one that doesn't. Dry rendering, meanwhile, plays to tallow's strength: richer, beefier, better under potatoes.

Tallow keeps longer, and it isn't close. More saturated fat means fewer double bonds for oxygen to attack, so a well-strained jar of tallow rides out a few months in a cool pantry where home-rendered lard really wants to live in the fridge. Either way the tell is the same: fat that's gone off smells like crayons or old paint, and no amount of garlic will fix it.

On price, raw suet or pork fat from a butcher runs a few dollars a pound and is sometimes free if you ask nicely — which is most of the argument for rendering your own, given that finished tallow retails around $8–15 a pound and butcher's leaf lard $8–14.

Can I substitute tallow for lard 1:1?

By weight, yes — both are close to 100% fat, so the ratios in a recipe hold. The results won't be identical. In savory cooking the swap is nearly invisible. In pastry, tallow's higher melting point gives you a sturdier, slightly less tender crust with a faint beef note. Do it in a meat pie, not a fruit one.

Which has the higher smoke point, tallow or lard?

Beef tallow, at roughly 400°F versus about 370°F for lard. Clean leaf lard can reach around 390°F. Purity matters as much as species — a well-strained fat always smokes higher than one with solids still floating in it.

Is leaf lard actually worth the extra money?

How long does home-rendered fat keep?

A few months in a cool, dark pantry if you strained it well, up to about a year refrigerated, and far longer frozen. Lard has a shorter window than tallow because it holds more polyunsaturated fat. Any cloudiness, off smell or gray patches means it goes in the bin.

Is tallow or lard better for deep-frying?

Tallow, for three reasons: higher smoke point, more saturated fat so it degrades more slowly across sessions, and a firmer set that drains crisp rather than greasy. Lard fries beautifully too, especially doughnuts, but it won't take as many rounds.
