Beef Tallow Fries: The Double-Fry Method That Works
McDonald's fried its french fries in beef tallow until 1990. Then a heart-disease campaigner named Phil Sokolof started buying full-page newspaper ads, the saturated-fat panic hit its peak, and the chain switched to vegetable oil. The company survived. The fry did not.
People aren't chasing a trend here. They're chasing a memory of a fry they ate in 1987 — and they're right. It genuinely did taste different, and you can get it back at home for the price of a few pounds of beef fat and one afternoon of paying attention.
The method, up front: cut russets into 3/8-inch batons, soak and dry them, blanch at 325°F for 5–7 minutes, rest them at least 30 minutes, then finish at 375°F for 2–4 minutes and salt immediately. Everything below is why each of those steps is there, and what goes wrong when you skip one.
Fair warning: these are deep-fried potatoes. That's the entire point of them. There's no health angle here and I'm not going to invent one.

Why tallow fries taste like that
Three things are going on, and only one of them is flavor.
Tallow is not a neutral fat. Refined vegetable oils are engineered to taste like nothing — a feature when you're frying doughnuts, a bug when you're frying potatoes. Rendered beef fat carries savory, faintly roasted aromatics, and some of those land in the crust. It reads the way a roast potato cooked in drippings reads: background, not foreground.
It's solid at room temperature. Tallow melts around 113–122°F, so the fat that soaks into the outer millimeter or two of a fry firms up as it cools instead of staying liquid and weeping out. That's the real trick: tallow fries stay rigid on the plate noticeably longer than oil fries.
And here's the tradeoff, because there is one. That same setting behavior makes a cold tallow fry waxier than a cold canola fry. Leftovers are worse, not better. Eat them hot, and if you must reheat, use a 400°F oven or an air fryer for 3–4 minutes. Microwaving a tallow fry produces something you will regret.
Smoke point: 400°F, and why that number decides the recipe
Beef tallow smokes at roughly 400°F. You finish fries at 375°F. That's about 25 degrees of headroom — enough, but not generous, which is why the thermometer is non-negotiable.

For context: refined peanut oil sits near 450°F, lard around 370°F, extra-virgin olive oil around 375°F. The high-smoke-point seed oils get there through refining, bleaching and deodorizing; tallow gets to 400°F by being melted, strained and left alone. That's just a different production route — and it's why tallow tastes of something and refined canola doesn't.
Two things drag that number down in real life: reuse and crumbs. Every session leaves free fatty acids behind, and every stray scrap of potato burns and lowers the whole batch's threshold. We spend an unreasonable amount of time thinking about what rendered beef fat actually is around here, so trust me: strain religiously.
Buy rendered, filtered tallow rather than raw suet unless you want the rendering to be the project — and if you do, that's a separate afternoon we've written up. Grass-fed tallow tends to be firmer, more yellow and a bit more assertive in flavor; grain-fed is paler and milder. For fries either works; firmer is slightly nicer.
The potato: russet, Maris Piper, nothing waxy
This matters more than the fat does, which is an annoying thing for a tallow company to admit.
You want a high-starch, low-moisture potato — roughly 20–22% dry matter. In the US that's a Russet Burbank, sold as an Idaho russet. In the UK it's Maris Piper, King Edward or Rooster. Waxy potatoes sit closer to 16–18% dry matter, and all that extra water turns to steam inside the fry and pushes the crust off from the inside. Red potatoes make sad fries. New potatoes make sadder ones.
Cut them into 3/8-inch (1 cm) batons. Squarer beats tapered — tapered ends burn while the middles are still raw. Peeling is optional and I don't bother.
Then soak the cut potatoes in cold water for at least 30 minutes — overnight in the fridge is better — to rinse off surface starch that would otherwise gum up and brown too early. Drain, and then dry them like you mean it. Salad spinner, then a towel, then a second towel. A wet potato going into 325°F fat spits violently and steams its own crust off. Water is the enemy of every good thing in this recipe.
The double fry: 325°F, then 375°F
One fry gives you either a raw middle or a burnt outside. Two fries at two temperatures give you both textures on purpose.
The first pass at 325°F cooks the interior to fluffy and drives moisture out of the surface at a temperature too low to build color. The potato's outer layer gelatinizes into a thin starch skin. Then you rest them, that skin dries and sets, and the second pass at 375°F flashes it into a rigid, blistered shell in two to four minutes.

Quantities. Two pounds (900 g) of potatoes feeds three or four people. You need about 3 quarts of melted tallow — call it 5 to 6 lb, or 2.5 kg — to get 3 inches of depth in a 6-quart Dutch oven. Never fill a pot more than halfway; fat climbs when the potatoes go in. Three pounds is the practical minimum in a smaller pan.
Timings. Blanch at 325°F for 5–7 minutes, in batches of no more than a pound. They should come out pale, limp and floppy — a properly blanched fry droops when you hold it by one end. Any color at all means your fat was too hot. Drain on a rack, not paper, and rest at least 30 minutes. Chilling them is better. Freezing them, spread on a tray until solid then bagged, is better still, and it's exactly what the frozen-fry industry does.
Finish at 375°F for 2–4 minutes, until deep gold and audibly hard when you tap one against the spider. Expect the fat to drop 25–50°F the moment potatoes hit it; wait for it to climb back before the next batch.
Salt within about ten seconds of the fry leaving the fat, while the surface is still wet with liquid tallow. Once it sets, salt bounces off. Use fine salt, toss in a big bowl rather than sprinkling on a tray, and use roughly a teaspoon per pound of potatoes.
British chips: thicker cut, slower blanch
"Chips" in the UK are a different food wearing a similar hat. Cut them at 3/4 inch (2 cm), because the whole point is a fluffy, almost mashed interior rather than a crisp-through baton.
Blanch thicker chips lower and longer: 300°F for 8–10 minutes, until a skewer slides through with no resistance. Rest them fully; there's more moisture to redistribute than in a thin fry. Finish at 375–390°F for 3–4 minutes.
Beef dripping is not a novelty in Britain, incidentally. Chip shops across Yorkshire and the north of England never stopped using it, and a proper dripping chip with malt vinegar and a lot of salt is one of the great cheap foods of the world.
What it costs, and how to reuse the fat
Rendered tallow runs roughly $8–15 a pound retail, so a first fill of 5 lb is $40–75. The fat is the durable part of this recipe, though. Fry only potatoes in it and you'll get six to eight sessions out of a batch, topping up as it slowly cooks off. That's under $10 a session, falling every time you reuse it. Rendering your own from butcher's suet costs $1–3 a pound and takes an afternoon.
To keep it: let the fat cool to about 200°F — warm enough to pour, cool enough not to melt your funnel — then strain it through a fine mesh sieve lined with cheesecloth or a paper coffee filter. Store it covered in the fridge, where it sets into a solid block — genuinely convenient.
Retire a batch when it turns dark as maple syrup, foams and doesn't settle, smells sharp or fishy, or starts smoking below 350°F.
The mistakes that make soggy fries

Almost every soggy fry is one of three sins. Crowding the pot, which drops the fat below 300°F and poaches the potatoes. Skipping the rest between fries, which leaves the starch skin damp so it never crisps. Or stacking hot fries in a bowl, where they steam each other limp inside ninety seconds. Spread them out — a wire rack in a low oven holds one batch while you fry the next.
